1 cup (100g) almond flour
1 3/4 cups (200g) powdered sugar
3 large egg whites
1/4 cup (50g) granulated sugar
1 teaspoon vanilla extract
1/4 teaspoon cream of tartar
1 cup (200g) granulated sugar (for caramel)
6 tablespoons (85g) unsalted butter
1/2 cup (120ml) heavy cream
1 teaspoon sea salt
Instructions
Line two baking sheets with parchment paper.
In a bowl, sift together the almond flour and powdered sugar.
In a clean, dry mixing bowl, whisk the egg whites until they become foamy. Add the cream of tartar, and continue to whisk until soft peaks form. Gradually add the granulated sugar while whisking until stiff peaks form. Fold in the vanilla extract.
Gently fold the almond flour mixture into the meringue in three additions until it flows like lava.
Using a piping bag fitted with a round tip, pipe small circles onto your prepared baking sheets.
Let the piped macarons sit at room temperature for at least 30 minutes.
Preheat your oven to 300°F (150°C).
Bake the macarons for about 15-18 minutes.
Let them cool completely on the baking sheet.
In a medium saucepan over medium heat, melt the sugar until it turns a deep amber color. Whisk in the butter until melted and combined. Gradually stir in the heavy cream and add the sea salt. Let it cool completely.
Pipe a small dollop of caramel onto the flat side of half of the macarons and top with the remaining shells.
