1 pie crust (store-bought or homemade)
1 cup honey
4 large eggs
1/4 cup heavy cream
1/4 cup granulated sugar
1 tablespoon all-purpose flour
1 teaspoon vanilla extract
1 teaspoon flaky sea salt (plus more for topping)
1 teaspoon lemon juice
Preheat your oven to 350°F (175°C).
Place the crust in a 9-inch pie dish. If making your own, roll out and fit into the dish, crimping the edges. Chill for 15 minutes in the fridge.
In a large bowl, whisk together honey, granulated sugar, and lemon juice. Add eggs one at a time, mixing well after each addition.
Pour in the heavy cream and sprinkle in flour. Add vanilla extract and sea salt, whisking until just combined.
Pour the filling into the prepared pie crust and bake for 35-40 minutes, until set with a slight jiggle.
Allow to cool at room temperature for at least 1 hour before topping with flaky sea salt.
