4 large eggs room temperature

½ cup sour cream

3 tablespoons heavy cream

46 cups boiling water for the water bath to bake the cheesecake

2¼ cup sweetened shredded coconut

1 cup salted caramel sauce Mrs. Richardson’s brand

plus more to use as garnish

Instructions

  • Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
  • In a bowl, combine chocolate sandwich cookie crumbs, melted butter, and salt; mix until sandy.
  • Press the mixture firmly into the bottom of the prepared pan to form the crust.
  • In a large mixing bowl, beat cream cheese until smooth. Gradually add granulated sugar and vanilla extract, mixing well.
  • Add eggs one at a time, blending after each addition. Mix in sour cream and heavy cream until smooth.
  • Pour the cheesecake batter over the crust in the springform pan.
  • Place the pan in a larger baking dish and fill the outer dish with boiling water to create a water bath.
  • Bake for 30-35 minutes, or until the center is set but still slightly jiggly.
  • Remove from the oven and water bath, allow cooling to room temperature before refrigerating for at least 4 hours, preferably overnight.
  • Top the chilled cheesecake with shredded coconut and drizzle with caramel sauce. Serve with additional sauces and whipped topping if desired.
