150 grams of almond flour
150 grams of powdered sugar
110 grams of egg whites (about 4 large eggs, aged for 1–2 days)
50 grams of granulated sugar
1 teaspoon of vanilla extract
Red gel food coloring to taste
115 grams of unsalted butter, softened
230 grams of powdered sugar for buttercream
1–2 tablespoons of heavy cream or milk for buttercream
1 teaspoon of vanilla extract for buttercream
Black gel food coloring for the belt
Prepare Your Baking Sheets: Line two baking sheets with parchment paper, drawing circles as a guide.
Make the Dry Mix: Combine almond flour and powdered sugar in a food processor, pulse and sift twice.
Whip the Egg Whites: Beat aged egg whites until foamy, add granulated sugar gradually and whip to stiff peaks. Add vanilla and red food coloring.
Combine: Gently fold the dry mix into the whipped egg whites until smooth.
Piping the Macarons: Transfer batter to a piping bag and pipe onto the parchment. Tap to release air bubbles.
Rest: Allow macarons to sit for 30-60 minutes to form a skin.
Bake: Preheat oven to 300°F (150°C) and bake for 15-20 minutes.
Make the Buttercream: Beat butter until creamy, add powdered sugar, cream, and vanilla until smooth. Color as desired.
Assemble: Pair similar macarons, filling with buttercream and sandwiching them together.
Finish the Look: Pipe a belt buckle using extra buttercream and add edible glitter if desired.
