Ingredients
4 Italian sausages (mild or spicy
about 12 oz total)
3 bell peppers (red
yellow
and green)
sliced
1 large red onion
sliced
2 tablespoons olive oil
1 teaspoon dried Italian seasoning
½ teaspoon garlic powder
Salt and black pepper to taste
Fresh parsley
chopped (optional
for garnish)
Instructions
- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- In a large bowl, combine the sliced bell peppers and red onion with olive oil, Italian seasoning, garlic powder, salt, and black pepper. Toss to coat the vegetables evenly.
- Spread the sausage links on one side of the prepared baking sheet and the seasoned vegetables on the other side.
- Bake in the preheated oven for 25-30 minutes, or until the sausages are cooked through and the vegetables are tender.
- Remove from the oven and let it cool slightly before garnishing with chopped fresh parsley if desired. Serve warm.

For an extra kick, you can use spicy Italian sausages. Feel free to swap the peppers with your favorite vegetables.
