Ingredients

4 Italian sausages (mild or spicy

3 bell peppers (red

yellow

and green)

sliced

1 large red onion

sliced

2 tablespoons olive oil

1 teaspoon dried Italian seasoning

½ teaspoon garlic powder

Salt and black pepper to taste

Fresh parsley

chopped (optional

for garnish)


Instructions

  • Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  • In a large bowl, combine the sliced bell peppers and red onion with olive oil, Italian seasoning, garlic powder, salt, and black pepper. Toss to coat the vegetables evenly.
  • Spread the sausage links on one side of the prepared baking sheet and the seasoned vegetables on the other side.
  • Bake in the preheated oven for 25-30 minutes, or until the sausages are cooked through and the vegetables are tender.
  • Remove from the oven and let it cool slightly before garnishing with chopped fresh parsley if desired. Serve warm.
