3 carrots, sliced

4 cups chicken or vegetable broth
1 cup heavy cream
Salt and pepper, to taste
1 teaspoon dried thyme
½ cup chopped fresh parsley
Optional: crusty bread or rolls for dipping
Brown the sausage in a large pot with olive oil over medium heat for 5-7 minutes.
Add the chopped onion, minced garlic, and sliced carrots; sauté for an additional 5 minutes.
