1 pound of Italian sausage
1 cup of long-grain rice
2 cups of chicken broth
1 medium onion, diced
1–2 cloves of garlic, minced
1 bell pepper, chopped
1 can of diced tomatoes, undrained
1 teaspoon of smoked paprika
Salt and pepper to taste
Fresh parsley or basil for garnish
Instructions
In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the sausage and cook until browned, breaking it into crumbles with a spoon, about 5-7 minutes.
Toss in the diced onion, bell pepper, and garlic. Sauté until the veggies soften, about 3-4 minutes.
Sprinkle the rice into the pot, stirring well to coat it with all those delicious flavors.
Pour in the chicken broth and the can of diced tomatoes (juice and all). Add the smoked paprika, salt, and pepper. Bring everything to a gentle boil.
Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 20 minutes.
After 20 minutes, check if the rice is cooked. If it needs more time, cover it and let it cook for a few more minutes.
Fluff the rice gently with a fork and sprinkle some fresh parsley or basil on top for garnish.
