  • 1 cup of long-grain rice
  • 2 cups of chicken broth
  • 1 medium onion, diced
  • 12 cloves of garlic, minced
  • 1 bell pepper, chopped
  • 1 can of diced tomatoes, undrained
  • 1 teaspoon of smoked paprika
  • Salt and pepper to taste
  • Fresh parsley or basil for garnish

  • Instructions

  • In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the sausage and cook until browned, breaking it into crumbles with a spoon, about 5-7 minutes.
  • Toss in the diced onion, bell pepper, and garlic. Sauté until the veggies soften, about 3-4 minutes.
  • Sprinkle the rice into the pot, stirring well to coat it with all those delicious flavors.
  • Pour in the chicken broth and the can of diced tomatoes (juice and all). Add the smoked paprika, salt, and pepper. Bring everything to a gentle boil.
  • Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 20 minutes.
  • After 20 minutes, check if the rice is cooked. If it needs more time, cover it and let it cook for a few more minutes.
  • Fluff the rice gently with a fork and sprinkle some fresh parsley or basil on top for garnish.
