Ingredients
- 1 lb chicken breast, thinly sliced
- 2 tbsp vegetable oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced

- 3 tbsp soy sauce
- 2 tbsp oyster sauce
- 1 tbsp rice vinegar
- 1 tbsp honey
- 2 tbsp freshly cracked black pepper
- 1 tsp cornstarch (optional, for thickening)
- 1 tbsp sesame oil (optional)
- Cooked rice, for serving

Cook the chicken: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken and cook for 5-7 minutes, stirring occasionally, until the chicken is golden and cooked through. Remove the chicken from the pan and set it aside.

Stir-fry the vegetables: In the same pan, add a little more oil if necessary. Stir-fry the bell peppers, onion, garlic, and ginger for 3-4 minutes, until the vegetables are tender-crisp.

Prepare the sauce: In a small bowl, mix together soy sauce, oyster sauce, rice vinegar, honey, and freshly cracked black pepper. If you want a thicker sauce, dissolve 1 teaspoon of cornstarch in 2 tablespoons of water and stir it into the sauce.

Combine and cook: Return the cooked chicken to the pan with the vegetables. Pour the sauce over the chicken and veggies, tossing everything together to coat. Let it cook for 2-3 minutes, allowing the sauce to thicken and the flavors to combine.
