Ingredients

2 boneless, skinless chicken breasts (sliced thin)

1 tbsp olive oil

2 cups mushrooms, sliced

2 cups fresh spinach

2 cloves garlic, minced

½ cup chicken broth

¼ cup heavy cream (optional for added richness)

Salt & pepper to taste

1 tsp Italian seasoning or thyme

Grated Parmesan (optional, for topping)
Instructions

Heat olive oil in a large skillet over medium heat. Add chicken slices, season with salt, pepper, and Italian seasoning, and cook until golden and cooked through (5–7 minutes). Remove and set aside.

In the same skillet, add mushrooms and cook until browned (4–5 minutes).

Stir in garlic, cook for 1 minute until fragrant.

Add chicken broth and scrape up any browned bits. Optional: stir in heavy cream and simmer 2–3 minutes to thicken slightly.

Add spinach and cooked chicken back to the skillet. Stir until spinach wilts and everything is well combined.

Sprinkle with Parmesan if desired. Serve hot.
