Description

Tender chicken pieces, earthy mushrooms, and fresh spinach come together in a rich, garlicky sauce—all in just one skillet. It’s perfect for a low-carb, high-protein meal that’s both comforting and nutritious.


Ingredients

  • 2 boneless, skinless chicken breasts (sliced thin)

  • 1 tbsp olive oil

  • 2 cups mushrooms, sliced

  • 2 cups fresh spinach

  • 2 cloves garlic, minced

  • ½ cup chicken broth

  • ¼ cup heavy cream (optional for added richness)

  • Salt & pepper to taste

  • 1 tsp Italian seasoning or thyme

  • Grated Parmesan (optional, for topping)


Instructions

  • Heat olive oil in a large skillet over medium heat. Add chicken slices, season with salt, pepper, and Italian seasoning, and cook until golden and cooked through (5–7 minutes). Remove and set aside.

  • In the same skillet, add mushrooms and cook until browned (4–5 minutes).

  • Stir in garlic, cook for 1 minute until fragrant.

  • Add chicken broth and scrape up any browned bits. Optional: stir in heavy cream and simmer 2–3 minutes to thicken slightly.

  • Add spinach and cooked chicken back to the skillet. Stir until spinach wilts and everything is well combined.

  • Sprinkle with Parmesan if desired. Serve hot.

Notes

  • Great served over rice, pasta, cauliflower rice, or on its own.

  • Make it dairy-free by omitting the cream and cheese—use extra broth instead.

  • Add red chili flakes for a spicy twist!
