Instructions
Preheat your oven to 325°F (165°C).
Pat the beef roast dry with paper towels and season it generously with salt and pepper.
In a large, oven-safe pot or Dutch oven, heat the olive oil over medium-high heat and sear the roast on all sides for about 4-5 minutes per side.
Add the chopped onions and garlic to the pot and sauté for about 2-3 minutes.
In a separate bowl, combine the cranberry sauce, balsamic vinegar, and fresh rosemary. Stir until well blended.
Pour the cranberry balsamic mixture over the seared beef and add optional carrots and potatoes around the roast.
Cover the pot with a lid or aluminum foil and place it in the preheated oven.
Roast for about 3 hours or until the beef is fork-tender.
Remove from the oven and let the roast rest for at least 15 minutes before slicing.
