  • 1 package (about 1 pound) of puff pastry (thawed if frozen)
  • 1 pound sausage meat (a mix of pork and Italian sausage)
  • 2 large onions, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 teaspoon fresh thyme leaves
  • 1 cup shredded Gruyère cheese
  • 1 egg, beaten for egg wash
  • Salt and pepper, to taste

  • Instructions

  • In a large skillet over medium heat, melt the butter. Add the sliced onions and a pinch of salt. Cook slowly for about 30-35 minutes until they are golden brown and caramelized. Stir in thyme, season with salt and pepper, and let cool.
  • Preheat your oven to 400°F (200°C). Roll out the puff pastry sheets into rectangles on a lightly floured surface.
  • On one half of each rectangle, layer the sausage meat, caramelized onions, and Gruyère cheese. Be careful not to overfill.
  • Fold the other half of the pastry over the filling, press down to seal the edges, crimp with a fork, trim if needed, and cut each roll into 3-4 pieces. Place on a lined baking sheet.
  • Brush the tops of the rolls with beaten egg for a golden finish.
  • Bake for about 25-30 minutes until puffy and golden brown.
  • Let cool for a few minutes and serve warm.
