1 package (about 1 pound) of puff pastry (thawed if frozen)
1 pound sausage meat (a mix of pork and Italian sausage)
2 large onions, thinly sliced
2 tablespoons unsalted butter
1 teaspoon fresh thyme leaves
1 cup shredded Gruyère cheese
1 egg, beaten for egg wash
Salt and pepper, to taste
Instructions
In a large skillet over medium heat, melt the butter. Add the sliced onions and a pinch of salt. Cook slowly for about 30-35 minutes until they are golden brown and caramelized. Stir in thyme, season with salt and pepper, and let cool.
Preheat your oven to 400°F (200°C). Roll out the puff pastry sheets into rectangles on a lightly floured surface.
On one half of each rectangle, layer the sausage meat, caramelized onions, and Gruyère cheese. Be careful not to overfill.
Fold the other half of the pastry over the filling, press down to seal the edges, crimp with a fork, trim if needed, and cut each roll into 3-4 pieces. Place on a lined baking sheet.
Brush the tops of the rolls with beaten egg for a golden finish.
Bake for about 25-30 minutes until puffy and golden brown.
Let cool for a few minutes and serve warm.
