Instructions
In a large bowl, whisk together the milk and eggs until combined.
In another bowl, mix the flour, baking powder, and salt until evenly combined.
Pour the dry ingredients into the wet mixture and stir until just combined. A few lumps are okay.
Gently fold in the crumbled sausage, herbs, and Parmesan cheese.
In a non-stick skillet or griddle over medium heat, add a tablespoon of butter or oil.
Pour about ¼ cup of batter onto the heated skillet for each pancake. Cook until bubbles form on the surface and edges look set, then flip and cook for another 2 minutes until golden brown.
