4 large banana peppers
1 cup of orzo pasta
1 lb ground turkey (or beef)
1 can (14.5 oz) diced tomatoes, with juices
4 cups vegetable or chicken broth
1 medium onion, diced
3 cloves garlic, minced
1 tsp dried oregano
1 tsp smoked paprika
Salt and pepper to taste
Olive oil for sautéing
Fresh basil, for garnish
Preheat your oven to 375°F (190°C). Cut tops off banana peppers and remove seeds.
Bring a pot of salted water to a boil and cook orzo until al dente. Drain.
In a large pot, heat olive oil and sauté diced onions until translucent. Add minced garlic, oregano, and smoked paprika.
Add ground turkey to the pot, breaking it apart and cooking until browned. Season with salt and pepper.
Pour in diced tomatoes and broth. Simmer for about 10 minutes.
Stir in cooked orzo.
Spoon orzo mixture into banana peppers and place in a baking dish.
Bake for about 20 minutes until peppers are tender.
Ladle soup base into bowls and top with stuffed peppers. Garnish with fresh basil.
