  • 1 cup of orzo pasta
  • 1 lb ground turkey (or beef)
  • 1 can (14.5 oz) diced tomatoes, with juices
  • 4 cups vegetable or chicken broth
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Olive oil for sautéing
  • Fresh basil, for garnish

  • Instructions

  • Preheat your oven to 375°F (190°C). Cut tops off banana peppers and remove seeds.
  • Bring a pot of salted water to a boil and cook orzo until al dente. Drain.
  • In a large pot, heat olive oil and sauté diced onions until translucent. Add minced garlic, oregano, and smoked paprika.
  • Add ground turkey to the pot, breaking it apart and cooking until browned. Season with salt and pepper.
  • Pour in diced tomatoes and broth. Simmer for about 10 minutes.
  • Stir in cooked orzo.
  • Spoon orzo mixture into banana peppers and place in a baking dish.
  • Bake for about 20 minutes until peppers are tender.
