Description
This Savory Tofu Noodle Stir-Fry features marinated extra firm tofu and a colorful mix of fresh spring vegetables, all tossed with delicate vermicelli rice noodles and a creamy tahini sauce.
Ingredients
14 oz Extra Firm Tofu
3 tbsp Tamari
2 tbsp Toasted Sesame Oil
1 tsp Red Pepper Flakes
8 oz Vermicelli Rice Noodles
4 stalks Green Onions
3 cloves Garlic
2 cups Chopped Vegetables
1/2 cup Tahini Stir-Fry Sauce

Instructions
- Press the tofu for at least 30 minutes to remove excess moisture, then cut it into cubes.
- In a bowl, combine tamari, toasted sesame oil, and red pepper flakes. Marinate the tofu cubes in the mixture for at least 15 minutes.
- Cook the vermicelli rice noodles according to package instructions, then drain and set aside.
- In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add minced garlic and sauté for 30 seconds.
- Add the marinated tofu to the skillet and cook until golden brown on all sides.
- Add the chopped vegetables and cook until tender, about 5-7 minutes.
- Toss in the cooked noodles and tahini stir-fry sauce, mixing well to combine all ingredients evenly.
- Serve hot and garnish with your choice of cilantro, green onion, sesame seeds, lime wedges, and sriracha.
