These Savoury Dinner Pancakes with Chilli Butter are a delicious and unique twist on traditional pancakes, perfect for a hearty meal.
Ingredients
1 x 15 cm (1 x 6″) length of chorizo chopped into small chunks
210 g (1 3/4 cups) plain (all-purpose) flour
1 tbsp baking powder (yes

pinch salt
1 large egg
300 ml (1 1/4 cups) milk full or half-fat
8 spring onions (scallions) finely chopped
1 tsp unsalted butter
50 g (1/2 cup) grated cheddar cheese
4 tbsp (60g) salted butter slightly softened
1 green chilli finely chopped (I like jalapenos)
8 rashers/strips streaky bacon fried and chopping into small pieces
4 tbsp golden syrup
Instructions
- In a mixing bowl, combine the plain flour, baking powder, and pinch of salt.
- In another bowl, whisk together the egg and milk, then pour it into the dry ingredients.
- Stir in the chopped chorizo, spring onions, butter, and cheddar cheese until mixed.
- Heat a non-stick skillet over medium heat and pour in ladles of batter to form pancakes. Cook until bubbles form, then flip and cook until golden.
- For the chilli butter, mix the softened salted butter with the chopped green chilli until well combined.
- Serve the pancakes topped with crispy bacon pieces and a dollop of chilli butter, drizzled with golden syrup.
