12 sheets of lasagna noodles
1 pound of shrimp, peeled and deveined
1 cup of crab meat, lump or backfin
15 ounces of ricotta cheese
2 cups of mozzarella cheese, shredded
1 cup of Parmesan cheese, grated
2 cups of spinach, fresh or frozen
3 cloves of garlic, minced
1 small onion, finely chopped
2 tablespoons of olive oil
Salt and pepper, to taste
Red pepper flakes, optional
1 teaspoon of Italian seasoning
2 cups of marinara sauce
Instructions
Preheat your oven to 375°F (190°C).
In a large skillet, add olive oil over medium heat. Add minced garlic and chopped onion, and cook until the onion is translucent (about 3-4 minutes).
Add shrimp to the skillet and cook until pink and opaque (about 2-3 minutes). Mix in crab meat and spinach and cook until the spinach wilts. Remove from heat.
In a large bowl, mix ricotta cheese, half of mozzarella, half of Parmesan, Italian seasoning, salt, and pepper.
In a 9×13 inch baking dish, spread 1 cup of marinara sauce at the bottom. Layer 4 noodles across the sauce, spread half of the ricotta mixture, and half of the seafood mixture. Repeat layering until all ingredients are used, finishing with noodles on top. Spread remaining marinara sauce and sprinkle remaining mozzarella and Parmesan.
Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes until cheese is bubbly and golden brown.
Let sit for 10-15 minutes before serving.
