4 bone-in, skin-on chicken thighs
1.5 lbs baby potatoes, halved
3 tablespoons olive oil
2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1 teaspoon dried thyme
Salt and pepper to taste
Fresh herbs for garnish (optional)
1 lemon, sliced
Instructions
Preheat your oven to 425°F (220°C).
In a mixing bowl, drizzle the olive oil over the chicken. Add garlic powder, onion powder, smoked paprika, thyme, salt, and pepper. Rub the spices into the chicken until well coated.
In another bowl, toss the halved baby potatoes with more olive oil, salt, and pepper until well coated.
On a large baking sheet, arrange the seasoned chicken and potatoes in a single layer.
Nestle the lemon slices in between the chicken and potatoes.
Place the sheet pan in the preheated oven and roast for 35-40 minutes, until the chicken is cooked through and the potatoes are tender.
Remove from the oven, allow to rest for about 5 minutes, and sprinkle with fresh herbs before serving.
