Ingredients
1 pound smoked sausage, sliced into 1-inch pieces
4 cups baby potatoes, halved
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 red onion, cut into wedges
3 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon dried oregano
1/2 teaspoon smoked paprika
Salt and pepper to taste
Fresh parsley, chopped (optional)
Instructions
1. Preheat oven to 425°F (220°C).
2. In a large bowl, toss potatoes, bell peppers, and onion with olive oil, garlic powder, oregano, smoked paprika, salt, and pepper.
3. Spread vegetables evenly on a large sheet pan.
4. Arrange sausage slices over the vegetables.
5. Roast in the oven for 25-30 minutes, stirring halfway through, until potatoes are tender and sausage is browned.
6. Remove from oven and garnish with fresh parsley before serving.
