Ingredients

  • 1 pound of Italian sausage (sweet or spicy)
  • 2 cups of broccoli florets
  • 1 red bell pepper, sliced into strips
  • 1 yellow bell pepper, sliced into strips
  • 1 medium red onion, sliced into wedges
  • 3 tablespoons of olive oil
  • 2 teaspoons of garlic powder
  • 1 teaspoon of smoked paprika
  • Salt and pepper, to taste
  • Fresh parsley (for garnish)

  • Instructions

  • Preheat your oven to 400°F (200°C).
  • Line a large baking sheet with parchment paper or aluminum foil.
  • Wash and chop your veggies.
  • In a large bowl, combine the chopped veggies, drizzle with olive oil, and sprinkle in garlic powder, smoked paprika, salt, and pepper. Toss until evenly coated.
  • Slice the sausages into bite-sized pieces and combine with the veggies.
  • Spread the mixture out on the prepared sheet pan in an even layer.
  • Roast in the oven for 25-30 minutes, stirring halfway through.
  • Remove from oven, cool for a few minutes, and garnish with parsley before serving.
