Ingredients

1 pound of Italian sausage (sweet or spicy)
2 cups of broccoli florets
1 red bell pepper, sliced into strips
1 yellow bell pepper, sliced into strips
1 medium red onion, sliced into wedges
3 tablespoons of olive oil
2 teaspoons of garlic powder
1 teaspoon of smoked paprika
Salt and pepper, to taste
Fresh parsley (for garnish)
Instructions
Preheat your oven to 400°F (200°C).
Line a large baking sheet with parchment paper or aluminum foil.
Wash and chop your veggies.
In a large bowl, combine the chopped veggies, drizzle with olive oil, and sprinkle in garlic powder, smoked paprika, salt, and pepper. Toss until evenly coated.
Slice the sausages into bite-sized pieces and combine with the veggies.
Spread the mixture out on the prepared sheet pan in an even layer.
Roast in the oven for 25-30 minutes, stirring halfway through.
Remove from oven, cool for a few minutes, and garnish with parsley before serving.
