Ingredients

1 lb shrimp, peeled and deveined

1 red bell pepper, sliced

1 green bell pepper, sliced

1 onion, sliced

2 tbsp olive oil

1 tbsp fajita seasoning

Salt & pepper, to taste

6 small flour or corn tortillas

Optional: lime wedges, sour cream, cilantro, avocado
Instructions

Cook veggies: Heat 1 tbsp olive oil in a skillet over medium heat. Sauté bell peppers and onions until tender-crisp, about 5 minutes. Remove and set aside.

Cook shrimp: Add remaining oil and shrimp to the skillet. Sprinkle with fajita seasoning, salt, and pepper. Cook until shrimp turn pink and opaque, about 3–4 minutes.

Combine: Return veggies to skillet and toss everything together for 1 minute.

Serve: Warm tortillas and fill with shrimp mixture. Add toppings as desired.
