  • 8 oz of spaghetti or linguine
  • 1 lb of large shrimp, peeled and deveined
  • 4 tablespoons of unsalted butter
  • 2 tablespoons of extra virgin olive oil
  • 4 cloves of garlic, minced
  • 1/2 teaspoon of red pepper flakes
  • 1/2 cup of dry white wine or chicken broth
  • Juice of 1 lemon
  • 1/4 cup of fresh parsley, chopped
  • Salt and pepper, to taste
  • Grated Parmesan cheese, for serving (optional)

  • Instructions

  • In a large pot, bring salted water to a boil. Add the spaghetti or linguine and cook according to package instructions until al dente. Reserve about 1/2 cup of the pasta cooking water, then drain the rest and set aside.
  • While the pasta is cooking, pat the shrimp dry with paper towels. Season them with salt and pepper.
  • In a large skillet over medium heat, melt 2 tablespoons of butter and add 2 tablespoons of olive oil. Once hot and bubbly, toss in the minced garlic and red pepper flakes. Sauté for about 30 seconds until fragrant.
  • Add the seasoned shrimp to the skillet in a single layer and cook for about 2-3 minutes on one side until they turn pink. Flip them over and cook for another 1-2 minutes. Remove the shrimp from the skillet and set aside.
  • Carefully pour in the white wine (or chicken broth) and stir, scraping the bottom of the pan. Let it simmer for about 2 minutes to reduce slightly.
  • Squeeze the juice of one lemon into the skillet and stir in the chopped parsley.
  • Add the drained pasta and cooked shrimp back into the skillet, tossing everything together. If the pasta seems dry, add a splash of the reserved pasta water. Finish by stirring in the remaining 2 tablespoons of butter until melted.
  • Taste and adjust the seasoning with more salt, pepper, or lemon juice if desired.
