8 oz of spaghetti or linguine
1 lb of large shrimp, peeled and deveined
4 tablespoons of unsalted butter
2 tablespoons of extra virgin olive oil
4 cloves of garlic, minced
1/2 teaspoon of red pepper flakes
1/2 cup of dry white wine or chicken broth
Juice of 1 lemon
1/4 cup of fresh parsley, chopped
Salt and pepper, to taste
Grated Parmesan cheese, for serving (optional)
Instructions
In a large pot, bring salted water to a boil. Add the spaghetti or linguine and cook according to package instructions until al dente. Reserve about 1/2 cup of the pasta cooking water, then drain the rest and set aside.
While the pasta is cooking, pat the shrimp dry with paper towels. Season them with salt and pepper.
In a large skillet over medium heat, melt 2 tablespoons of butter and add 2 tablespoons of olive oil. Once hot and bubbly, toss in the minced garlic and red pepper flakes. Sauté for about 30 seconds until fragrant.
Add the seasoned shrimp to the skillet in a single layer and cook for about 2-3 minutes on one side until they turn pink. Flip them over and cook for another 1-2 minutes. Remove the shrimp from the skillet and set aside.
Carefully pour in the white wine (or chicken broth) and stir, scraping the bottom of the pan. Let it simmer for about 2 minutes to reduce slightly.
Squeeze the juice of one lemon into the skillet and stir in the chopped parsley.
Add the drained pasta and cooked shrimp back into the skillet, tossing everything together. If the pasta seems dry, add a splash of the reserved pasta water. Finish by stirring in the remaining 2 tablespoons of butter until melted.
Taste and adjust the seasoning with more salt, pepper, or lemon juice if desired.
