1 lb chicken livers, cleaned and trimmed
1 medium onion, finely chopped
2 cloves fresh garlic, minced
1/4 cup unsalted butter
2 tablespoons brandy or cognac (optional)
1 teaspoon thyme (fresh or dried)
Salt and pepper to taste
1/2 cup heavy cream
Instructions
In a large skillet over medium heat, melt the butter. Add the finely chopped onion and sauté until translucent—about 5 minutes.
Add the minced garlic and cook for an additional minute until fragrant.
Add the cleaned chicken livers in a single layer. Cook for about 3-4 minutes on one side, then flip and cook for another 3-4 minutes until browned on the outside but slightly pink inside.
Pour in the brandy or cognac (if using) and let it cook down for a minute to enhance the flavor.
Sprinkle in the thyme, then season with salt and pepper. Mix well and let it cook for another minute.
Remove the skillet from heat and allow it to cool slightly. Transfer everything to a food processor.
Add the heavy cream and blend until smooth. Scrape down the sides if needed, and blend until perfect.
Taste and adjust the seasoning if necessary.
