  • Salt and pepper to taste
  • 1/2 cup heavy cream

  • Instructions

  • Add the minced garlic and cook for an additional minute until fragrant.
  • Add the cleaned chicken livers in a single layer. Cook for about 3-4 minutes on one side, then flip and cook for another 3-4 minutes until browned on the outside but slightly pink inside.
  • Pour in the brandy or cognac (if using) and let it cook down for a minute to enhance the flavor.
  • Sprinkle in the thyme, then season with salt and pepper. Mix well and let it cook for another minute.
  • Remove the skillet from heat and allow it to cool slightly. Transfer everything to a food processor.
  • Add the heavy cream and blend until smooth. Scrape down the sides if needed, and blend until perfect.
  • Taste and adjust the seasoning if necessary.
