1 lb boneless, skinless chicken breasts or thighs, diced
1 tablespoon olive oil
1 medium onion, finely chopped
3 cloves garlic, minced
1 can (15 oz) white beans, drained and rinsed
1 can (4 oz) diced green chiles
2 cups chicken broth
1 teaspoon ground cumin
1 teaspoon chili powder
Salt and pepper to taste
1 cup corn
1 cup sour cream or Greek yogurt
Juice of 1 lime
Optional toppings: shredded cheese, avocado, cilantro, tortilla chips
In a large pot, heat the olive oil over medium heat. Add the chopped onions and sauté until soft and fragrant—about 3-4 minutes.
Add the minced garlic and stir, cooking for another minute until fragrant.
