2 cups chicken broth
1 cup heavy cream
1 medium onion
3 cloves garlic
1 cup frozen peas
2 tablespoons olive oil
1 teaspoon paprika
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon dried thyme
½ teaspoon parsley
Instructions
- In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, sautéing until fragrant and translucent.
- Season the chicken breasts with paprika, salt, black pepper, and thyme. Add the seasoned chicken to the skillet and brown on both sides.
- Pour in the chicken broth and bring to a simmer. Once simmering, add the uncooked rice, stirring to combine.
- Cover the skillet and reduce the heat to low. Cook for about 20 minutes or until the rice is tender and the chicken is cooked through.
- Stir in the heavy cream and frozen peas, cooking for an additional 5 minutes until heated through. Adjust seasoning to taste.
- Garnish with parsley before serving.
