Ingredients
Scale
2 pounds beef chuck roast, cut into 1-inch cubes
1 tablespoon olive oil
4 cloves garlic, minced
1 large onion, diced
3 medium carrots, sliced
2 medium potatoes, diced
1 bell pepper, diced
1 can (14.5 ounces) diced tomatoes, with juices
1 cup beef broth
2 teaspoons dried oregano
2 teaspoons dried thyme
Salt and pepper, to taste
1 tablespoon Worcestershire sauce
Instructions
In a large skillet, heat the olive oil over medium-high heat. Season the beef chunks with salt and pepper, then sear until browned on all sides.
In the same skillet, add the garlic and onion. Sauté for about 3-4 minutes until the onion is translucent.
Transfer the beef and sautéed onion mixture into your slow cooker. Add the carrots, potatoes, and bell pepper.
Stir in the diced tomatoes (with juices), beef broth, oregano, thyme, and Worcestershire sauce.
Mix everything well to ensure the flavors meld together. Taste and adjust salt and pepper if necessary.
Cover the slow cooker and set it to low for about 8 hours or high for 4 hours.
Once ready, gently stir to redistribute the flavors before serving. You may thicken the sauce if desired.
