2 lbs of ground beef
1 large onion, chopped
3 cloves of fresh garlic, minced
1 bell pepper, chopped
2 (15 oz) cans of diced tomatoes
2 (15 oz) cans of kidney beans, drained and rinsed
1 (15 oz) can of tomato sauce
2 cups of beef broth
2 tbsp of chili powder
1 tsp of ground cumin
1 tsp of smoked paprika
1/2 tsp of cayenne pepper
Salt and pepper to taste
Optional toppings: shredded cheese, sour cream, green onions, jalapeños
Brown the ground beef in a skillet over medium heat until no longer pink, then drain grease and transfer to slow cooker.
In the same skillet, sauté chopped onions, bell pepper, and minced garlic until onions are translucent (about 3-5 minutes), then add to slow cooker.
Add diced tomatoes, kidney beans, tomato sauce, and beef broth to the slow cooker.
Sprinkle in chili powder, cumin, smoked paprika, cayenne, salt, and pepper. Stir to combine.
Cover and cook on low for 6-8 hours or high for 4 hours.
When done, taste and adjust seasoning, then serve in bowls with optional toppings.
