2 lbs beef chuck roast, cut into 1-inch pieces
1 can (14 oz) coconut milk
1 cup beef broth
2 medium onions, diced
4 cloves garlic, minced
1 tablespoon ginger, minced
2 tablespoons curry powder
1 tablespoon garam masala
1 tablespoon ground cumin
1 tablespoon soy sauce
2 tablespoons brown sugar
1 can (14 oz) diced tomatoes, undrained
1 bell pepper, sliced

Instructions
Cut your beef chuck roast into 1-inch pieces.
In a large bowl, combine the coconut milk, beef broth, curry powder, garam masala, ground cumin, soy sauce, and brown sugar. Whisk until smooth.
In your slow cooker, layer the beef first, then add the diced onions, minced garlic, ginger, and bell pepper. Pour the coconut mixture over everything.
