2 lbs beef stew meat (chuck roast works beautifully)
1 large onion, chopped
3 cloves fresh garlic, minced
8 oz mushrooms, sliced
1 cup beef broth
1 tablespoon Worcestershire sauce
1 teaspoon Dijon mustard
1 tablespoon soy sauce
1 cup sour cream
Salt and pepper to taste
1 tablespoon olive oil
Fresh parsley, chopped
Egg noodles or mashed potatoes for serving
Instructions
Brown the beef: In a large skillet over medium-high heat, add the olive oil. Once hot, add the beef stew meat in batches, browning all sides of the beef cubes until golden.
Add to the slow cooker: Transfer the browned beef to your slow cooker. Add chopped onion, minced garlic, and sliced mushrooms on top.
Mix in the liquids: In a small bowl, whisk together beef broth, Worcestershire sauce, Dijon mustard, and soy sauce. Pour this mixture over the beef and vegetables. Season with salt and pepper.
Cook low and slow: Cover and set the slow cooker to low for 7-8 hours, or high for 3-4 hours.
Finish it off: About 30 minutes before serving, stir in sour cream until well combined. Optionally thicken with cornstarch.
Serve warm: Stir once more and adjust seasoning. Serve over egg noodles or mashed potatoes, garnished with fresh parsley.
