Ingredients
1 lb chicken breasts
sliced
2 cups heavy whipping cream
1 cup low-sodium chicken broth
1 tbsp butter
diced
2 tbsp Cajun seasoning
2 cloves garlic
minced
1 tsp garlic powder
5 oz freshly shredded Parmesan cheese
1 tsp red chili pepper flakes
½ tsp salt
½ tsp black pepper
1 lb broccoli
rinsed and cut into florets
1 tbsp fresh parsley
chopped (for garnish)
Instructions
- In a slow cooker, combine sliced chicken breasts, heavy cream, chicken broth, diced butter, Cajun seasoning, minced garlic, garlic powder, and red chili pepper flakes. Stir well to combine.
- Season with salt and black pepper, then cover and cook on low for 4-5 hours or on high for 2-3 hours until the chicken is cooked through.
- About 30 minutes before serving, stir in the broccoli florets and cover again.
- Once the broccoli is tender, stir in the freshly shredded Parmesan cheese until melted and creamy.
- Garnish with chopped parsley before serving.
Notes
For a little extra kick, adjust the red chili pepper flakes to your taste. Serve over pasta for a more filling meal.
