2 pounds of beef chuck roast, cut into 1-inch cubes
1 tablespoon of olive oil
4 cups of beef broth
4 large carrots, peeled and sliced
3 stalks of celery, chopped
1 large onion, chopped
3 cloves of garlic, minced
2 cups of potatoes, diced
1 teaspoon of dried thyme
1 teaspoon of dried rosemary
2 bay leaves
Salt and pepper, to taste
1 cup of green beans, trimmed (optional)
Brown the beef: Heat olive oil in a skillet over medium-high heat, season beef with salt and pepper, and brown in batches.
Add aromatic goodness: Transfer browned beef to slow cooker, sauté onion and garlic in the skillet, then pour over beef.
Layer on the veggies: Add carrots, celery, potatoes, thyme, and rosemary, and toss everything gently.
Pour it all in: Add beef broth and bay leaves, and bring together with salt and pepper.
Set and forget: Cover slow cooker and cook on low for 8 hours or high for 4 hours.
Add in the greens: If using green beans, stir them in during the last hour of cooking.
Finishing touches: Remove bay leaves and adjust seasoning before serving.
