Ingredients

  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 1 lb baby potatoes, halved
  • 1 cup carrots, sliced
  • 1/2 cup unsalted butter
  • 5 cloves garlic, minced
  • 2 tsp fresh rosemary, chopped
  • 2 tsp fresh thyme, chopped
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

Instructions

  • Wash and halve the baby potatoes, and slice the carrots into 1/4 inch thick rounds.
  • Trim any excess fat from the chuck roast and cut it into 1-inch cubes.
  • Melt unsalted butter in a saucepan over low heat, then sauté minced garlic for 1-2 minutes.
  • Stir in chopped rosemary, thyme, salt, and pepper, simmer for a minute, then set aside.
  • Heat oil in a skillet over medium-high heat, brown the beef cubes, then transfer to slow cooker.
  • Layer potatoes and carrots at the bottom of the slow cooker, season, add browned beef, then pour the garlic butter mixture on top.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours.
