- 2 lbs beef chuck roast, cut into 1-inch cubes
- 1 lb baby potatoes, halved
- 1 cup carrots, sliced
- 1/2 cup unsalted butter
- 5 cloves garlic, minced
- 2 tsp fresh rosemary, chopped
- 2 tsp fresh thyme, chopped
- Salt and pepper to taste
- Fresh parsley, chopped (optional)
Instructions
- Wash and halve the baby potatoes, and slice the carrots into 1/4 inch thick rounds.
- Trim any excess fat from the chuck roast and cut it into 1-inch cubes.
- Melt unsalted butter in a saucepan over low heat, then sauté minced garlic for 1-2 minutes.
- Stir in chopped rosemary, thyme, salt, and pepper, simmer for a minute, then set aside.
- Heat oil in a skillet over medium-high heat, brown the beef cubes, then transfer to slow cooker.
- Layer potatoes and carrots at the bottom of the slow cooker, season, add browned beef, then pour the garlic butter mixture on top.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
