4–5 lbs beef brisket, preferably untrimmed
2 tbsp black pepper, coarsely ground
1 tbsp coriander seeds, crushed

1 tbsp brown sugar
1 tsp mustard seeds

1 tsp ground thyme
1/4 cup water or beef broth
Instructions
In a mixing bowl, combine the black pepper, coriander, paprika, garlic powder, onion powder, brown sugar, mustard seeds, crushed red pepper, and thyme.
Pat the brisket dry with paper towels. Rub the spice mix generously all over the surface of the meat.
