Ingredients
1 ½ lbs steak (sirloin or ribeye)
cubed into bite-sized pieces
4 large potatoes (Russet or Yukon Gold)
thinly sliced
2 cups cheddar cheese (sharp
freshly grated for optimal melting)
1 cup heavy cream
1 cup beef broth
1 medium onion
finely diced
2 cloves garlic
minced
2 tbsp butter
1 tsp smoked paprika
½ tsp black pepper
1 tsp salt
Fresh parsley or green onions (optional garnish)
Instructions
- In a skillet, melt the butter over medium-high heat and sear the cubed steak until browned on all sides, then transfer to the slow cooker.
- Layer the thinly sliced potatoes, onion, and garlic over the steak in the slow cooker.
- In a bowl, mix the heavy cream, beef broth, smoked paprika, salt, and black pepper, then pour over the layered ingredients.
- Top with the grated cheddar cheese, cover, and cook on low for 6-8 hours or until the potatoes are tender.
- Once cooked, let it rest for a few minutes before serving, garnished with fresh parsley or green onions if desired.
Notes
