This Slow Cooker Taco Soup is a hearty and flavorful dish that combines seasoned ground beef, beans, corn, and tomatoes, all simmered to perfection for a warm and comforting meal.
Ingredients
1 lb (450g) ground beef
1 can (15 oz) black beans
drained and rinsed
1 can (15 oz) corn kernels
drained
1 can (14.5 oz) diced tomatoes
undrained
1 small onion
finely chopped
1 can (8 oz) tomato sauce
1 packet (1 oz) taco seasoning mix
1 can (4 oz) diced green chilies
optional for heat
2 cups beef broth or water
1 cup shredded cheddar or Mexican blend cheese
Sour cream
Fresh cilantro or parsley
chopped
Salt and pepper to taste
Instructions
- In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
- Add the cooked beef to the slow cooker and stir in the black beans, corn, diced tomatoes, onion, tomato sauce, taco seasoning, green chilies (if using), and broth or water.
- Season with salt and pepper to taste. Stir well to combine all ingredients.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, serve hot with toppings of your choice, such as cheese, sour cream, and cilantro.
