2 lbs of boneless, skinless chicken thighs
1 cup of soy sauce
1 cup of brown sugar
1/4 cup of rice vinegar
1 tablespoon of sesame oil
3 cloves of garlic, minced
1 tablespoon of ginger, grated or minced
1 tablespoon of cornstarch (optional)
2 tablespoons of water (for cornstarch mixture)
1 teaspoon of sesame seeds (for garnish)
Scallions, sliced (for garnish)
Instructions
Start by placing your chicken thighs into the slow cooker. If you’re using frozen chicken, fear not—it'll cook beautifully!
In a separate bowl, whisk together the soy sauce, brown sugar, rice vinegar, sesame oil, garlic, and ginger.
Pour the sauce mixture over your chicken in the slow cooker, ensuring every piece is generously coated.
Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours. Avoid removing the lid too often to keep the cooking time optimal.
If you prefer a thicker sauce, mix the cornstarch with water in a small bowl and stir it into the chicken during the last 30 minutes of cooking.
Once done, shred the chicken right in the slow cooker with two forks and mix it back into the sauce.
