1 lb ground beef (80/20 blend is perfect for burgers)
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder (fresh garlic adds more punch!)
1 teaspoon onion powder
1 tablespoon Worcestershire sauce
4 large flour tortillas
2 cups shredded cheese (cheddar or a mix works great)
1/2 cup pickles, sliced (optional, but oh so good!)
Cooking oil (for the skillet)
Instructions
In a large skillet over medium-high heat, add the ground beef. Season it with salt, black pepper, garlic powder, onion powder, and Worcestershire sauce. Use a spatula to break it up as it cooks, letting it brown evenly for about 6-8 minutes.
Once the beef is cooked through, drain any excess grease.
Lay a tortilla flat on a clean surface. Spread about 1/2 cup of the cooked beef over half of the tortilla, then sprinkle about 1/2 cup of cheese on top. If you’re feeling adventurous, add sliced pickles now!
Carefully fold the tortilla over the filling, creating a half-moon shape.
Wipe down your skillet and return it to medium heat. Add a splash of cooking oil to prevent sticking.
Place the folded quesadilla in the skillet. Cook for 3-4 minutes on one side, until it’s golden brown and crispy. Flip and cook for another 3-4 minutes on the other side until the cheese is melted.
Remove the quesadilla from the skillet and cut it into wedges. Repeat with the remaining tortillas.
Serve hot with your favorite dipping sauce like ranch or salsa.
