1 pound of ground pork
1 cup of finely chopped cabbage
3 green onions, thinly sliced
3 cloves of fresh garlic, minced
1 tablespoon of soy sauce
1 teaspoon of sesame oil
1 teaspoon of grated fresh ginger
Salt to taste
Pepper to taste
8 small corn tortillas
Vegetable oil for frying
Fresh cilantro, chopped (for topping)
Sliced radishes (for topping)
Lime wedges (for topping)
Extra soy sauce or hot sauce (for drizzling)
Instructions
In a large bowl, mix together the ground pork, chopped cabbage, green onions, garlic, soy sauce, sesame oil, ginger, and a pinch of salt and pepper.
Heat a non-stick skillet over medium heat and add a splash of oil. Scoop about a tablespoon of the filling into the pan. Flatten it slightly with a spatula and cook for 3-4 minutes on each side until the filling is cooked through and crispy. Repeat until all your filling is cooked.
In another skillet, heat a little more oil and warm the tortillas one by one until they're nice and pliable. Once warmed, keep them covered with a clean kitchen towel.
Once your dumplings are cooked, gently press down on each dumpling with a spatula to give it a smashed look.
Take a warm tortilla, add a smashed dumpling to the center, and load it up with toppings: cilantro, radish slices, and a squeeze of lime. Drizzle with soy sauce or hot sauce.
Plate them up and serve warm.
