1 medium onion diced
2 cloves garlic minced
¼ cup all-purpose flour
16 ounces broth vegetable or chicken
16 ounces whole milk
½ teaspoon salt
½ teaspoon paprika
¼ teaspoon pepper
1 large head of broccoli chopped into small florets
1 large carrot grated
8 ounces smoked gouda fresh grated
Instructions
- In a large pot, melt the unsalted butter over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for another minute until fragrant.
- Stir in the flour and cook for 2 minutes, stirring constantly.
- Gradually whisk in the vegetable or chicken broth and whole milk, bringing the mixture to a simmer.
- Add the salt, paprika, and pepper, then stir in the chopped broccoli and grated carrot. Cook for about 10-15 minutes until the broccoli is tender.
- Remove from heat and stir in the grated smoked gouda until melted and well combined.
