These S’mores Brownies combine the gooey, chocolatey goodness of brownies with the crunchy graham cracker base and toasted marshmallow topping of a classic s’more. It’s the perfect treat for any occasion—no campfire required!

For the Graham Cracker Crust:
- 1 ½ cups (180g) graham cracker crumbs
- ¼ cup (50g) granulated sugar
- ½ cup (115g) unsalted butter, melted
For the Brownie Layer:
- ½ cup (115g) unsalted butter, melted
- 1 cup (200g) granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup (60g) cocoa powder
- ¼ cup (30g) all-purpose flour
- ¼ tsp salt
- ½ cup (90g) chocolate chips
For the Marshmallow Topping:
- 2 cups mini marshmallows
Instructions
1️⃣ Prepare the Crust:
- Preheat oven to 350°F (175°C).
- Mix graham cracker crumbs, sugar, and melted butter.
- Press into the bottom of a 9×9-inch baking pan and bake for 8 minutes.
2️⃣ Make the Brownie Batter:
- Whisk melted butter and sugar until smooth.
- Add eggs and vanilla, mixing well.
- Sift in cocoa powder, flour, and salt, then fold in chocolate chips.
- Pour the brownie batter over the baked crust.
3️⃣ Bake the Brownies:
- Bake for 25-30 minutes, until a toothpick inserted comes out with a few moist crumbs.
4️⃣ Add the Marshmallow Topping:
- Sprinkle mini marshmallows evenly over the brownies.
- Broil for 1-2 minutes, watching closely until marshmallows are golden brown.
5️⃣ Cool, Slice & Enjoy:
- Let cool for at least 10 minutes before slicing.
Notes
✔️ For extra crunch, add crushed graham crackers on top.
✔️ For a gooier brownie, slightly underbake them.
✔️ Best enjoyed fresh but can be stored for up to 3 days.
