4 bone-in, skin-on chicken thighs
1 tablespoon olive oil
1 medium onion, diced
3 cloves garlic, minced
1 cup chicken broth
1 cup heavy cream
2 tablespoons all-purpose flour
1 teaspoon smoked paprika
1 teaspoon garlic powder
Salt and pepper to taste
Fresh parsley for garnish
Instructions
Heat the oil in a large skillet over medium heat.
Season the chicken thighs with salt and pepper. Add them skin-side down to the skillet and cook for about 5 minutes until golden brown, then flip and cook another 5 minutes.
Remove the chicken from the skillet and set aside.
In the same skillet, add the diced onion and cook for about 3–4 minutes until translucent. Then add minced garlic and sauté for another minute.
Sprinkle flour over onions and garlic, stir, and cook for a minute. Gradually whisk in chicken broth and bring to a simmer.
Pour in the heavy cream, stir well, and season with smoked paprika, garlic powder, salt, and pepper.
Return the chicken to the skillet, skin-side up. Spoon the gravy over the chicken, cover, and simmer for 25–30 minutes until cooked through.
Garnish with fresh parsley if desired, and serve.
