Description

These Snickerdoodle Cookies are soft, chewy, and coated in cinnamon sugar for a delightful treat that will satisfy your sweet tooth.


Ingredients

1/2 cup coconut oil melted and cool

1 cup granulated white sugar

1/4 teaspoon baking soda

1/4 teaspoon cream of tartar

1 egg

1/2 teaspoon vanilla extract

11/2 cups all-purpose flour

3 tablespoons granulated sugar

11/2 teaspoon ground cinnamon


Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, mix together the melted coconut oil and granulated sugar until well combined.
  • Add the baking soda, cream of tartar, egg, and vanilla extract, mixing until smooth.
  • Gradually add in the all-purpose flour until the dough comes together.
  • In a small bowl, combine the 3 tablespoons of granulated sugar with the cinnamon.
  • Scoop tablespoons of dough, roll them into balls, and coat each ball with the cinnamon sugar mixture.
  • Place the coated dough balls onto the prepared baking sheet, leaving space between each.
  • Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  • Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For a traditional flavor, substitute coconut oil with unsalted butter.
