These Snickerdoodle Cookies are soft, chewy, and coated in cinnamon sugar for a delightful treat that will satisfy your sweet tooth.
Ingredients

1/2 cup coconut oil melted and cool
1 cup granulated white sugar
1/4 teaspoon baking soda
1/4 teaspoon cream of tartar
1 egg
1/2 teaspoon vanilla extract
1–1/2 cups all-purpose flour
3 tablespoons granulated sugar
1–1/2 teaspoon ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together the melted coconut oil and granulated sugar until well combined.
- Add the baking soda, cream of tartar, egg, and vanilla extract, mixing until smooth.
- Gradually add in the all-purpose flour until the dough comes together.
- In a small bowl, combine the 3 tablespoons of granulated sugar with the cinnamon.
- Scoop tablespoons of dough, roll them into balls, and coat each ball with the cinnamon sugar mixture.
- Place the coated dough balls onto the prepared baking sheet, leaving space between each.
- Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For a traditional flavor, substitute coconut oil with unsalted butter.
