1 cup unsalted butter, softened
¾ cup powdered sugar
1 large egg yolk
1 teaspoon vanilla extract
2 cups all-purpose flour
1 cup almond flour
½ teaspoon salt
½ teaspoon ground cinnamon
¾ cup raspberry jam
Powdered sugar for dusting (optional)
Instructions
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, cream the butter and powdered sugar together until light and fluffy.
Add the egg yolk and vanilla extract, and mix until combined.
In another bowl, combine all-purpose flour, almond flour, salt, and ground cinnamon, then gradually add this dry mixture to the butter mixture and stir until just combined.
Chill the dough for about 30 minutes in the refrigerator.
Roll out the dough on a lightly floured surface to about ¼ inch thick and use cookie cutters to cut out shapes.
Place the cookies on the prepared baking sheet. For half of the cookies, cut out a smaller shape in the center.
Bake for about 10-12 minutes or until lightly golden brown.
Let the cookies cool on a wire rack, then spread jam on the whole cookies and top with the cut-out cookies.
Dust with powdered sugar before serving.
