  • ¾ cup powdered sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup almond flour
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ¾ cup raspberry jam
  • Powdered sugar for dusting (optional)

  • Instructions

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large bowl, cream the butter and powdered sugar together until light and fluffy.
  • Add the egg yolk and vanilla extract, and mix until combined.
  • In another bowl, combine all-purpose flour, almond flour, salt, and ground cinnamon, then gradually add this dry mixture to the butter mixture and stir until just combined.
  • Chill the dough for about 30 minutes in the refrigerator.
  • Roll out the dough on a lightly floured surface to about ¼ inch thick and use cookie cutters to cut out shapes.
  • Place the cookies on the prepared baking sheet. For half of the cookies, cut out a smaller shape in the center.
  • Bake for about 10-12 minutes or until lightly golden brown.
  • Let the cookies cool on a wire rack, then spread jam on the whole cookies and top with the cut-out cookies.
  • Dust with powdered sugar before serving.
