2 cups of rolled oats
1 cup of unsalted almonds, chopped
1 cup of dried cranberries
1/2 cup of honey or maple syrup
1/4 cup of almond butter
1/4 teaspoon of salt
1 teaspoon of vanilla extract
1/2 teaspoon of cinnamon
Preheat your oven to 350°F (175°C).
Line an 8×8 inch baking dish with parchment paper, leaving a bit of overhang for easy removal later.
In a large bowl, combine the rolled oats, chopped almonds, dried cranberries, salt, and cinnamon. Mix everything evenly.
In a small saucepan over low heat, combine the honey (or maple syrup) and almond butter. Stir until melted and combined, about 2-3 minutes.
Remove from heat and stir in the vanilla extract.
Pour the melted mixture into the dry ingredients and stir until everything is well-coated, using your hands if necessary.
Transfer the mixture into the prepared baking pan, and press it firmly into an even layer.
Bake for 20-25 minutes until golden brown at the edges.
Remove from the oven and let cool completely before slicing into bars.
