2 cups masa harina
1/2 teaspoon baking powder
1/2 teaspoon salt
1 to 1 1/4 cups warm water
2 tablespoons vegetable oil
1 can (15 oz) refried beans
1 cup shredded cheese
Toppings: sour cream, fresh cilantro, diced tomatoes, avocado slices, hot sauce
In a mixing bowl, combine the masa harina, baking powder, and salt. Gradually add the warm water, stirring until a soft dough forms.
Divide the dough into golf ball-sized portions. Roll between your palms and flatten into discs about 1/4 inch thick, then create raised edges.
Heat a non-stick skillet over medium-high heat. Add oil and cook each sope for about 3 minutes on each side until golden-brown.
Heat the refried beans in a small saucepan over medium heat.
Spread warm refried beans on top of each sope while they are still hot.
Sprinkle shredded cheese over the top of the beans, allowing it to melt slightly.
Add desired toppings such as sour cream, cilantro, tomatoes, avocado, and hot sauce.
Serve warm.
