Savory, cheesy, and smothered in creamy sausage gravy, these Southern-style breakfast enchiladas are the ultimate comfort food to start your morning with a delicious twist.
Ingredients
For the Enchiladas:
- 
6 large flour tortillas 
- 
6 eggs, scrambled 
- 
½ lb breakfast sausage 
- 
1 cup shredded cheddar cheese 
- 
½ cup diced bell peppers (optional) 
- 
¼ cup green onions, chopped 
For the Sausage Gravy:
- 
2 tablespoons butter 
- 
2 tablespoons all-purpose flour 
- 
1 cup milk 
- 
½ cup cooked sausage crumbles (from above) 
- 
Salt and black pepper to taste 
Instructions
- 
Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish. 
- 
In a skillet, cook breakfast sausage until browned. Remove and set aside. 
- 
Scramble eggs in the same skillet. Remove from heat. 
- 
Assemble enchiladas: fill each tortilla with scrambled eggs, sausage, cheese, bell peppers, and green onions. Roll tightly and place seam-side down in the baking dish. 
- 
In a saucepan, melt butter. Whisk in flour and cook for 1 minute. Slowly add milk, stirring constantly until thickened. Stir in sausage crumbles, salt, and pepper to make the gravy.

Pour sausage gravy over the enchiladas and top with extra cheese if desired. 
- 
Bake uncovered for 20–25 minutes until bubbly and golden. 
- 
Garnish with extra green onions and serve hot!

Can be prepped the night before and baked in the morning.

Add jalapeños or hot sauce for a spicy kick.

Swap sausage for bacon or veggie crumbles for variety.
