1 9-inch pie crust (pre-baked)

4 medium ripe tomatoes, sliced

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup chopped fresh basil

1/4 cup chopped green onions

1 cup shredded sharp cheddar cheese

1/2 cup shredded mozzarella cheese

1/2 cup mayonnaise

1 tablespoon Dijon mustard (optional)

1 tablespoon olive oil


Instructions

1. Preheat oven to 350°F (175°C).

2. Place sliced tomatoes on paper towels and sprinkle with salt. Let sit for 20 minutes to draw out moisture.

3. Blot tomatoes gently to remove excess liquid.

4. In the pre-baked pie crust, layer half of the tomatoes.

5. Top with half of the chopped basil and green onions.

6. Repeat with remaining tomatoes, basil, and onions.

7. In a small bowl, mix mayonnaise, Dijon mustard, and cheeses until smooth.

8. Spread cheese mixture over the top layer of tomatoes.

9. Drizzle with olive oil and bake for 30–35 minutes until golden and bubbly.

10. Cool slightly before slicing. Serve warm or at room temperature.

Notes

Use heirloom or garden tomatoes for best flavor.

Drain tomatoes well to avoid a soggy crust.
