Ingredients

4 eggs

1 cup diced tomatoes (fresh or canned)

½ cup diced bell peppers (red or green)

1 small onion, chopped

1 garlic clove, minced

1 tsp smoked paprika

1 tbsp olive oil

Salt & pepper to taste

Fresh parsley or cilantro for garnish (optional)
Instructions

Heat olive oil in a skillet over medium heat. Sauté onion, garlic, and bell peppers until soft (about 5 minutes).

Add diced tomatoes and smoked paprika; simmer for 5–7 minutes until sauce thickens. Season with salt and pepper.

Make 4 small wells in the sauce and crack an egg into each. Cover and cook until eggs are done to your liking (about 5 minutes for runny yolks).

Garnish with fresh herbs and serve with crusty bread.
