Ingredients

  • 4 eggs

  • 1 cup diced tomatoes (fresh or canned)

  • ½ cup diced bell peppers (red or green)

  • 1 small onion, chopped

  • 1 garlic clove, minced

  • 1 tsp smoked paprika

  • 1 tbsp olive oil

  • Salt & pepper to taste

  • Fresh parsley or cilantro for garnish (optional)


Instructions

  • Heat olive oil in a skillet over medium heat. Sauté onion, garlic, and bell peppers until soft (about 5 minutes).

  • Add diced tomatoes and smoked paprika; simmer for 5–7 minutes until sauce thickens. Season with salt and pepper.

  • Make 4 small wells in the sauce and crack an egg into each. Cover and cook until eggs are done to your liking (about 5 minutes for runny yolks).

  • Garnish with fresh herbs and serve with crusty bread.

Notes

  • Add a pinch of chili flakes for extra heat.

  • Try topping with crumbled feta or Manchego cheese.

  • Serve with toasted bread or warm tortillas for dipping.
