2 tablespoons of olive oil
1 onion, diced
3 cloves of garlic, minced
1 red bell pepper, chopped
1 pound of chorizo sausage, sliced
4 medium potatoes, peeled and cubed
4 cups of chicken or vegetable broth
1 teaspoon of smoked paprika
Salt and pepper to taste
Fresh parsley, chopped for garnish
Sour cream or Greek yogurt for creaminess (optional)
In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until it becomes translucent and aromatic, about 5 minutes.
