2 tablespoons Dijon mustard
1 tablespoon olive oil
3 cloves garlic, minced
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
1 teaspoon paprika
1 teaspoon ground cumin
Salt and black pepper to taste
1/2 cup breadcrumbs (panko works wonderfully)
Optional: Zest of one lemon
Instructions
Preheat your oven to 425°F (220°C).
Pat the rack of lamb dry with paper towels.
In a bowl, mix together Dijon mustard, olive oil, minced garlic, chopped rosemary, chopped thyme, paprika, ground cumin, salt, and black pepper.
Rub the spice mixture all over the rack of lamb.
Press the breadcrumbs onto the meat to form a crust.
Place the rack in a roasting pan, bone side down, and roast for about 25-30 minutes for medium-rare.
Let the rack rest for at least 10 minutes.
Slice between the bones to create individual chops and serve.
