2 tablespoons of olive oil
1 medium onion, finely chopped
2 cloves of fresh garlic, minced
1 carrot, diced
1 celery stalk, diced
1 teaspoon of paprika
½ teaspoon of cayenne pepper
1 pound of mixed seafood (shrimp, scallops, and fish)
4 cups of fish or seafood stock
1 cup of heavy cream
Salt and black pepper to taste
1 tablespoon of fresh parsley, chopped for garnish
8 large prawns, peeled and deveined
1 tablespoon of sesame oil
1 tablespoon of sesame seeds
Instructions
In a large pot over medium heat, warm the olive oil until it shimmers.
Add the chopped onion, garlic, carrot, and celery. Sauté for about 5-7 minutes until softened.
Stir in the paprika and cayenne pepper, cooking for another minute.
Gently add your mixed seafood to the pot, combining it well with the veggies and spices.
Add the fish stock and bring the mixture to a simmer. Cook for about 10-15 minutes.
Carefully transfer the soup to a blender and puree until smooth.
Return the blended bisque to the pot, stir in the heavy cream, and let it simmer for an additional 5 minutes. Season with salt and pepper to taste.
In a separate pan, heat the sesame oil over medium heat. Toss in the prawns and season with salt and pepper. Cook until they turn pink, about 2-3 minutes per side, and sprinkle sesame seeds over them as they cook.
Ladle the creamy bisque into bowls and garnish with sesame prawn croutons and parsley.
